Project Management And Customer Relationship

I work for a software development company and I have recently been given some responsabilities. Something it worries me more is the relationship with the customer (Public administration company IT manager), it's a tough customer and an important one for our company.
I have tried to find out, searching the web, ways of assuring the customer a good job is being done and allow him to follow every step of the process (I don't want him to lose the confidence in our team)
At this point I address you, experienced managers, to get some hints, tricks or methodologies about the relationship with clients.
There is a few rules we follow in our company when talking with customers, for instance, creating a document about each meeting and sending a copy back to every participant (a way to assure everything has been understood in our side and also it's also a hardcopy to back our words).
Other rules could be to deliver a demo every month as SCRUM proposes, What do you proposes?
